Courgette pasta with garlic and ginger tomatoes

This is such a delicious quick meal which is really healthy and filling.

Ingredients (serves 1)
2 medium courgettes
Light soy sauce
3 garlic pieces
Handful of sweet cherry tomatoes
A good amount of ginger (not powdered)
Mozerella (about 1/3 sliced large one)
A dash of lime

Method:

With the large single part of the grater cut the courgettes in half and make them into ribbons. Then boil them for 4-5 minutes in water until still a little al dente.

In a separate pan, press the garlic and ginger then add the soy sauce (a good dash). Wait for the ingredients to merge a little and just before you take it off, put the halved cherry tomatoes in for about a minute. Take them off the boil and after draining the courgettes place in a bowl with the sauce on top. Then pepper (salt will not be needed). Add a dash of lime juice and place the mozerella on the top of the serving.

I like to add a little cayenne to enhance the spice or alternatively Tabasco.
